Dish Description
Gola Kabab, also known as bajre ki kabab or Junagadhi kabab originated from a city called Junagadh, in Gujrat, India. These were deep-fried with fatty meats as the main ingredient. Check this recipe here, no frying, plus healthy proteins and vegan proteins also without compromising the taste.

Ingredients
- 2 lbs. of ground turkey or ground meat of choice3 tablespoons of green masala (link to the recipe to make green masala is above)
- 1 cup of cooked quinoa (link to the recipe to cook quinoa is above)
- ½ cup green cooked moong beans or any beans (link to the recipe to cook beans is above)
- ¼ cup of chic peas flour
- ½ cup of bajra flour or Ragi flour
- 1 lemon juice squeezed
- 2-3 strings of chopped green onions
- 1 bunch of cilantro chopped
- ¼ cup of mint leaves chopped
- ¼ cup of coriander seeds
- 2 tsp of ground cumin seeds
- 2 tsp ground cayenne pepper (add as needed for more spice)
- 1 tsp garam masala
- 2 tsp of salt
- Oil spray
Steps
- In a large bowl add the meat and the green masala Add lemon juice, cooked mung beans, cooked quinoa, dry coriander seeds, bajra flour. chickpeas flour and all the chopped greens
- Add salt, ground cumin seeds, garam masala, and cayenne pepper.
- Mix all the ingredients into a paste, cover, and refrigerate for one hour.
- Stir the mixture again after taking it out from the refrigerator
- Spray avocado oil on a tray and make small round balls for the entire mixture and put them on the tray
- I use a multi-function toaster/oven/air fryer and on the air-fryer tray I placed an oven liner sheet and sprayed the sheet with avocado oil
- Spread the balls on the tray ensuring that they are dipped and covered in the oil spray that is on the liner
- Close the air-fryer and put the air-fryer on 400 F for 30 minutes and turn on the air-fryer
- In about 10-12 mins check the kababs, if they are medium brown, turn them and cook on the other side for another 10-12 minutes. If not then give it another couple of minutes
- Check the kababs in about 20-22 minutes, if they are medium to darker brown they are ready otherwise cook for another couple of minutes
