Spicy Cauliflower Rice is a low-carb, flavorful alternative to traditional rice, made by stir-frying cauliflower with spices, creating a tasty, healthier side dish or main course.

Ingredients
- 1. 1 cup frozen organic mixed vegetables
- 2. 1 tablespoon McCormick garlic powder
- 3. 4-5 curry leaves
- 4. 1 tablespoon cumin seeds
- 5. 2 tablespoons avocado oil
- 6. 1 bunch organic cilantro washed and chopped
- 7. 2 tablespoons cayenne pepper
- 8. sea salt and black pepper as needed
Steps
- 1.Wash and cut the cauliflower, take all the stems out and put the florets in a food processor. Pulse 3 to 4 times
until the cauliflower looks like rice. (You can have this ready a day prior to save time, store the rice in
refrigerator) - 2.Put oil in a saucepan and heat the pan.
- 3.Add curry leaves, garlic powder, cumin seeds, and cayenne pepper to the oil. Sautee for 2-3 minutes
- 4.Add the cauliflower rice and frozen vegetables to the pan and stir well. Add half cilantro, and salt, and black
pepper as needed. - 5.Cook and stir for 5-7 minutes until all cooked.
- 6.Garnish with cilantro and enjoy!
- 7.You can add garbanzo beans and a piece of fish or chicken if you like.
