Spicy Cauliflower Rice



1. 1 whole Cauliflower

2. 1 cup frozen organic mixed vegetables

3. 1 tablespoon McCormick garlic powder

4. 4-5 curry leaves

5. 1 tablespoon cumin seeds

6. 2 tablespoons avocado oil

7. 1 bunch organic cilantro washed and chopped

8. 2 tablespoons cayenne pepper

9. sea salt and black pepper as needed



Wash and cut the cauliflower, take all the stems out and put the florets in a food processor. Pulse 3 to 4 times until the cauliflower looks like rice. (You can have this ready a day prior to save time, store the rice in refrigerator)

Put oil in a saucepan and heat the pan.

Add curry leaves, garlic powder, cumin seeds, and cayenne pepper to the oil. Sautee for 2-3 minutes

Add the cauliflower rice and frozen vegetables to the pan and stir well. Add half cilantro, and salt, and black pepper as needed.

Cook and stir for 5-7 minutes until all cooked.

Garnish with cilantro and enjoy!
You can add garbanzo beans and a piece of fish or chicken if you like.
