Frittata is an egg-based Italian dish similar to an omelette or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses, or vegetables. The word frittata is Italian and roughly translates to “fried”.

Ingredients
- 1. 9 organic pasture raised eggs
- 2. ½ cup spinach chopped
- 3. 1 can organic black beans
- 4. ½ medium-size onion chopped
- 5. ½ cup chopped red cabbage
- 6. 1 tomato chopped
- 7. ½ bunch cilantro chopped
- 8. ½ cup cheese
- 9. 2-3 mushrooms chopped
- 10. 1 tsp ground cumin seeds
- 11. ½ tsp turmeric powder
- 12. 2 tsp cayenne pepper (optional)
- 13. Salt and black pepper to taste
- 14. Coconut Oil
Steps
- 1. Beat the eggs in a large bowl, add black pepper, and salt.
- 2. Heat coconut oil in a pan over medium heat. Add onions and sauté.
- 3. Add cabbage and tomatoes and cook for about 3 minutes
- 4. Add all the veggies and cook for couple more minutes, cover the pan and cook till all veggies begin to soften
- Add the beans and mix well
- 5. Pour the egg mixture over the veggies and sprinkle with cheese
- 6. Cover the pan and cook on medium-low until the eggs are all cooked! Enjoy
