Egg Masala is a delectable Indian dish that consists of hard-boiled eggs simmered in a flavorful tomato-based gravy, spiced with aromatic herbs and spices.

Ingredients
- 6 organic pasture-raised eggs
- 1 large onion chopped or 1/2 cup fried onions
- 1 tablespoon Green Masala
- 2 large tablespoons of yogurt
- 2 chopped tomatoes
- 1 tablespoon of lemon juice (optional)
- 2 tsp ground cumin seeds
- 2 tsp ground coriander seeds
- 1 tsp turmeric powder
- 2 tsp curry powder
- 1 tsp garlic powder
- 2 tsp cayenne pepper
- Salt to taste
- 1/2 can tomato sauce
- Paprika optional
- ½ bunch cilantro chopped
- 2 tablespoon avocado oil
Steps
- Blend tomatoes, green masala, onions yogurt and tomato sauce
- In a large pan, heat the oil and cook the onion-tomato paste for about 3-5 minute
- Add all the spices and cook for a couple of minutes
- Beat the eggs and add a little salt and pepper to taste
- Pour the egg mixture in the pan and keep stirring until all mixed and scrambled.
- Sprinkle with cilantro serve with brown rice or bread or Roti! Enjoy!
