Healthy starts in the kitchen
1. 6 organic pasture-raised eggs
2. 1 large onion chopped or 1/2 cup fried onions
3. 1 tablespoon Green Masala
4. 2 large tablespoons of yogurt
5. 2 chopped tomatoes
6. 1 tablespoon of lemon juice (optional)
7. 2 tsp ground cumin seeds
8. 2 tsp ground coriander seeds
9. 1 tsp turmeric powder
10. 2 tsp curry powder
11. 1 tsp garlic powder
12. 2 tsp cayenne pepper
13. Salt to taste
14. 1/2 can tomato sauce
15. Paprika optional
16. ½ bunch cilantro chopped
17. 2 tablespoon avocado oil
1. Blend tomatoes, green masala, onions yogurt and tomato sauce
2. In a large pan, heat the oil and cook the onion-tomato paste for about 3-5 minute
3. Add all the spices and cook for a couple of minutes
4. Beat the eggs and add a little salt and pepper to taste
5. Pour the egg mixture in the pan and keep stirring until all mixed and scrambled.
6. Sprinkle with cilantro serve with brown rice or bread or Roti! Enjoy!
