GREEN MUNG BEANSGOLA KABAB !

Dish Description

Green Mung beans, we all have seen in our mom’s kitchen back home. However somehow, we have forgotten this high plant-based protein. It is loaded with fiber and is low in calories, and fat. This food is from the legumes family. Green Mung beans are powerhouses of vitamins like Vitamin A, B, C, D, E, and Vitamin K and minerals like Folic Acid, Magnesium, Manganese, Calcium, Potassium, Iron, and Phosphorous, Zinc, and Copper. Since it is high in protein, and fiber and low in fat and calories, it makes an ideal food to help lose weight!

There are many benefits of eating these on a daily base. It may help with lowering high blood pressure and cholesterol, hence protecting against heart disease. It has a low glycemic index, which can help regulate blood sugar and can prevent or treat type 2 diabetes. Helps with inflammation, and due to its high fiber content, it helps with constipation and feeling full. It is easily digestible. It also boosts the immune system and protects our body from infections and viruses. I remember eating boiled mung after sickness for energy and rebuilding my immune system.

Because of its many benefits to health, it is recommended that we eat these beans every day, even if we need to eat them as medicine. “Food is Thy Medicine” Try these! Here is my recipe:

Ingredients
  • 1. 1 cup green mung beans
  • 2. 4 cups of water
  • 3. 1 tsp sea salt
  • 4. 1 tsp cumin seeds
  • 5. 5-6 leaves of holy basil chopped
  • 6. ¼ chopped onion
  • 7. Chopped Cilantro as neede
Steps

Soak the beans overnight, if possible. If not then just wash add water, salt, cumin seeds, and let boil on high. When boiling, cover the lid and let it cook on low for 45 minutes or until soft. I love to drink it’s broth since it is full of all the above nutrients. Strain the broth into a container and drink ½ to 1 cup and store in the refrigerator for later use. Empty the cooked beans into a serving bowl and garnish with onions, holy basil, and cilantro. Enjoy! If you like it spicy, add some cayenne pepper.  You can sprout these at home as well!
