Green Masala-Secret Sauce

Dish Description

When growing up in India, I saw my grandma and my mom used green chili paste for all their recipes. This paste was ground daily by hand on a black stone with fresh green chilies (Jalapenos), fresh cilantro, fresh garlic, and fresh ginger. This is called “Green Masala”. In the majority of my recipes, you will find, I use green masala. My mom made this masala every day since they didn’t have any medium to store this for future use, but we have refrigerators. I make about 4-5 mason jars at one time and store them in refrigerators which last me about 2-3 months. You can also store it in the freezer for up to 6 months. Once you have this ready in your refrigerator, any dish you make will be quick and easy.

Ingredients
  • 1. 1 cup green chilies (Jalapenos)
  • 2. ½ cup fresh, peeled garlic
  • 3. ½ cup fresh ginger peeled
  • 4. ½ cup fresh organic cilantro
  • 5.½ teaspoon sea salt
  • 6. ½ cup water or as needed
Steps
  • 1: Rinse the chilies, garlic, ginger, and cilantro
  • 2: Blend all these ingredients in a blender with salt and water
  • 3: Fill this paste in mason jars
  • If you decide to make this masala in a larger quantity, then you can keep one in the refrigerator for daily use and freeze the other jars. They will be good for 6 months in the freezer. Use as directed in the recipes on this website.
