In India, Lentil soup is a very common food. There are many kinds of lentils. They are different in color and have their own health benefits. The red lentil is called masoor and its soup is called Dal, which is very delicious with rice or naans
INGREDIENTS
1. 1 cup Red Lentils
2. 1 cup vegetable broth (Or water)
3. 2 cups of water
4. 1/2 small chopped onion (optional)
5. 1 cup of fresh veggies-mushroom, cauliflower, Brussel sprouts, carrots, red cabbage (Veggies of your choice)
6. 1-2 bay leaves
7. 1 tablespoon miso mixed with 3 tablespoons of water (optional)
8. 1/4 tsp turmeric
9. 1/4 tsp cumin powder, 1/4 tsp coriander powder, 1/2 tsp red chili powder
10. 1/4 tsp curry powder
11. 1/4 bunch chopped cilantro
12. 2 tbsp lemon juice
13. 1 cup of organic coconut milk
14. Salt to taste

1. Rinse the lentils, add vegetable broth, water, salt, bay leaves, onion, and turmeric, cumin, coriander, red chili, and curry powder. Cook on high, after boiling, simmer to low to medium and cook for 10-15 minutes
2. Once the lentils are cooked, take the bay leaves out. Use a hand blender and mix the soup
3. Add veggies and cook for 5 minutes. Add lemon juice, miso, and coconut milk. Turn off the stove. Garnish with cilantro and serve hot! Enjoy!
