Dish Description
Dokras is a savoury sponge dish that is native to the Indian state of Gujarat and parts of adjacent states, and is popular throughout the country. It is made with a fermented batter that is steamed to a cake-like consistency.

Ingredients
- 1. 1/2 cup quinoa powder
- 2. 1/2 cup organic non-GMO corn flour 8 oz brown rice spaghetti
- 3. 1/2 cup gram flour
- 4. 1+1/2 cup yogurt
- 5. 1+1/2 cup water
- 6. 1/2 cup oil
- 7. 1 tbsp Green Masala
- 8. Salt to taste
- 9. 1 tsp turmeric
- 10. 1 bunch cilantro chopped
- 11. 3 tbsp lemon juice
- 12. 3-4 tbsp red crushed pepper
- 13. 2 tsp Eno (fruit salt) or baking soda
Steps
- 1. Mix all the ingredients in a bowl except ENO and 2 tbsp of crushed pepper
- 2. Prepare a pot to steam the dokras and prepare a round or square dish to steam the dokras. Grease it.
- 3. Divide the batter into 2 bowls each equal amount
- 4. Add 1 tsp ENO to one bowl and stir well, add this to the greased dish, and garnish with chopped cilantro and crushed pepper. Steam for 25-30 minutes. Do the same with the remaining batch
- 5. Let it cool and cut into square pieces
